Pablo Pena, Business Development Manager, Ynsect

Pablo Pena is business development manager at Ynsect Human Nutrition & Health, a French Agri-tech leader producing sustainable and nutritional ingredients for the food industry from food-grade farmed insects. YHN&H is the first to realize production of insect-based food ingredients on a large scale that are easily accessible and applicable for the current food market. One of Pablo’s goals is the international deployment of the world’s first insect-based, functional ingredient range. Besides digestible protein, the ingredients also contain essential nutrients like vitamins, minerals, fibres, and healthy fats. The high-quality food ingredients can add value to applications such as sports nutrition, meat (alternatives), pasta, baked goods and many more. At age 24, he started his career at Jimmy Joy, a Dutch food startup producing nutritionally full meals in powdered form as R&D manager after graduating as an MSc Food Technologist. After several years he moved onto more commercial activities within the food sector, including international sales and business development. In 2021, he started at YHN&H as business development manager, in charge of further expanding Ynsect’s Food Business Unit’s commercial reach.

Lorena Sanchez, Ynsect

Lorena Sanchez, Scientific Project Manager, Ynsect

Lorena Sanchez is scientific project manager at Ynsect with more than 8 years of experience in agroindustry. Her main topics of interest are on the development of novel solutions and ingredients that are nutritious, healthy, and sustainable, with a particular focus protein diversification and circularity in food systems. She has worked on process and product development of insect-based ingredients and is currently responsible for building strategic scientific evidence, to support nutritional and health claims for human and animal applications. She is working in close relationship with the marketing, IP and regulatory teams, as well as with a wide research network of partner Universities and private institutions on the valorisation of insect ingredients. She earned a bachelor’s degree in biology and has a Master and PhD in Biotechnology from the National Autonomous University of Mexico. Her postgraduate studies were centred on the usage of proteins on pharmaceutical applications either as carriers or as agents to promote detoxification and drug activation. Lorena is the author of 8 scientific articles and seven patents.

Maximilien Jouy, Impact Governance Manager, Ynsect

Maximilien Jouy, equipped with an engineering background, embarked on his journey with Ynsect two years ago as impact manager. His core mission at the company revolves around internalising the capacity to measure and analyse environmental impact, utilising this critical data to enhance the decision-making processes across the organisation. By measuring environmental impact, he equips the company with the tools to navigate today's eco-conscious landscape and exceed regulatory requirements, fostering a culture of environmental accountability. In a world increasingly focused on the impact of business activities on the environment and society, Maximilien's role underscores Ynsect's corporate responsibility. His contributions ensure that the company's decisions and actions are in harmony with its commitment to environmental and social improvement, making Ynsect a beacon of sustainability in a changing world.
